This simple and healthy Air Fryer Chicken and Vegetables recipe is a quick and easy meal perfect for busy weeknights. Tender chicken breasts and mixed vegetables are seasoned with garlic powder, paprika, and olive oil, then air fried to perfection. It’s a one-pan dish that delivers delicious, crispy results with minimal effort.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 2 cups mixed vegetables (such as bell peppers, zucchini, and carrots)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste

Instructions

  • Preheat the air fryer to 400°F (200°C).
  • Cut the chicken into bite-sized pieces and chop the vegetables into similar-sized pieces.
  • In a large bowl, combine the chicken, vegetables, olive oil, garlic powder, paprika, salt, and pepper. Mix well to coat everything evenly.
  • Place the chicken and vegetables in the air fryer basket in a single layer.
  • Cook in the air fryer for 15-20 minutes, shaking the basket halfway through, until the chicken is cooked through and the vegetables are tender.
  • Serve hot and enjoy!

Notes

  • For a crispier texture, cook for an additional 2-3 minutes, depending on your air fryer model.
  • You can swap the mixed vegetables for your favorites, such as broccoli, cauliflower, or Brussels sprouts.
  • For extra flavor, try marinating the chicken in the seasoning mixture for 30 minutes before cooking.
