- 4 large chicken breasts, cut 3/4 way through horizontally, then pounded flat into large pieces
- 8 slices mozzarella cheese
- 1 cup canned corn, drained
- 8 oz cream cheese
- 1 tablespoon minced garlic
- 4 oz green chilis
- 1 cup Mexican cheese blend, shredded
- 1/4 cup cilantro, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup all-purpose flour
- 2 eggs, well beaten
- 2 cups breadcrumbs
Instructions
- Preheat your air fryer to 375°F (190°C).
- Lay the chicken breasts flat and cut them horizontally about 3/4 of the way through. Pound them out to even thickness.
- In a mixing bowl, combine the mozzarella cheese, cream cheese, corn, garlic, green chilis, Mexican cheese blend, cilantro, salt, and pepper. Stir well until mixed.
- Spoon the mixture into the center of each chicken breast and roll them up tightly.
- Dredge the stuffed chicken rolls first in flour, then dip them in the beaten eggs, and finally coat them with breadcrumbs.
- Place the rolls in the air fryer basket, leaving space between them for even cooking.
- Air fry for 20-25 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C).
- Serve warm, garnished with extra cilantro if desired.
