Description

A comforting and hearty casserole packed with ground beef, fresh vegetables, and a creamy mushroom sauce, topped with melted cheddar cheese. This classic Amish-inspired dish is perfect for cozy family dinners and easy meal prep.

For the Base:

  • 1 pound ground beef

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

For the Vegetables:

  • 1 cup carrots, sliced

  • 1 cup potatoes, diced

  • 1 cup corn kernels

  • 1 cup green beans, chopped

For the Sauce:

  • 1 can (10.5 oz) cream of mushroom soup

  • 1 teaspoon dried thyme

  • 1 teaspoon dried parsley

  • 1 cup shredded cheddar cheese


Instructions

  • Preheat oven to 350°F (175°C).

  • In a large skillet over medium heat, cook ground beef, chopped onion, and minced garlic until beef is browned and onion is translucent. Drain excess fat. Season with salt and black pepper.

  • In a large mixing bowl, combine cooked beef mixture, carrots, potatoes, corn, and green beans.

  • Stir in cream of mushroom soup, dried thyme, and dried parsley until well combined.

  • Transfer mixture to a greased 9×13-inch baking dish.

  • Sprinkle shredded cheddar cheese evenly over the top.

  • Cover with foil and bake for 45 minutes. Remove foil and bake an additional 10–15 minutes, or until vegetables are tender and cheese is melted and bubbly.

  • Let cool slightly before serving.

Notes

  • Use fresh or frozen vegetables as preferred. If frozen, thaw before mixing.

  • Ground turkey or chicken can be used as a leaner alternative to beef.

  • Add other vegetables like peas or mushrooms for variety.

  • Leftovers can be refrigerated and reheated well.
