- 2 ripe avocados
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- 1 small tomato, diced
- 2 tablespoons crumbled feta cheese
- 1 tablespoon chopped fresh basil
- 1 tablespoon olive oil
- Red pepper flakes (optional)
Instructions
- Toast the whole grain bread slices until golden and crispy.
- While the bread is toasting, cut the avocados in half and remove the pits. Scoop the flesh into a bowl and mash with a fork. Add lemon juice, salt, and pepper, and mix until smooth.
- Once the bread is toasted, use a heart-shaped cookie cutter (or knife) to cut the toast into heart shapes.
- Spread the mashed avocado evenly over each heart-shaped toast.
- Top with diced tomato, crumbled feta cheese, and chopped fresh basil.
- Drizzle a little olive oil over the top and sprinkle with red pepper flakes for an optional kick.
