Description

This creamy, cheesy one-pan dish is a delicious combination of tender chicken, fluffy rice, and a rich, creamy sauce made with cream cheese, Colby Jack cheese, and a hint of garlic and Italian seasoning. Perfect for a quick and comforting meal!


Ingredients

  • 3 cups cooked chicken, diced or shredded
  • 3 cups cooked rice
  • ½ cup butter, room temperature and cubed
  • 8 ounces cream cheese, room temperature and cubed
  • 10.5 ounces cream of chicken soup
  • 3 cloves garlic, minced
  • 0.7 ounce Italian dressing mix (such as Good Seasons)
  • 1 cup chicken stock
  • 2 cups shredded Colby Jack cheese, divided use
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked chicken, cooked rice, butter, cream cheese, cream of chicken soup, garlic, Italian dressing mix, and chicken stock. Stir until everything is well combined and the cream cheese and butter start to melt into the mixture.
  • Add 1 ½ cups of the shredded Colby Jack cheese into the mixture, and season with salt and pepper to taste. Stir again to combine.
  • Pour the mixture into a greased 9×13-inch baking dish and spread it out evenly.
  • Top with the remaining ½ cup of shredded Colby Jack cheese.
  • Bake in the preheated oven for 25-30 minutes or until the cheese is melted and the casserole is bubbly.
  • Garnish with fresh parsley before serving.

  • You can substitute the cream of chicken soup with a low-fat version or even a homemade cream sauce for a lighter option.
  • For extra flavor, you can add cooked vegetables like peas or mushrooms.
