Ingredients

  • 1 whole chicken
  • 1 apple, cored and sliced
  • 1/2 cup dried cranberries
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  • Preheat the oven to 375°F.
  • Season the chicken with salt, pepper, thyme, and rosemary.
  • Stuff the cavity of the chicken with sliced apples and dried cranberries.
  • Place the chicken in a roasting pan and drizzle with olive oil.
  • Roast in the oven for 1 to 1 1/2 hours, or until the chicken is cooked through.
  • Let the chicken rest for 10 minutes before carving.
