Arancini are crispy, golden rice balls stuffed with gooey mozzarella cheese. These savory treats are perfect as appetizers or snacks, with a creamy center that contrasts beautifully with their crunchy exterior.


Ingredients

  • 2 cups cooked rice
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped parsley
  • Salt and pepper to taste
  • 1/2 cup mozzarella cheese, cut into small cubes
  • Vegetable oil for frying

Instructions

  • In a mixing bowl, combine cooked rice, Parmesan cheese, eggs, breadcrumbs, parsley, salt, and pepper.
  • Take a small amount of the rice mixture and flatten it in your palm.
  • Place a cube of mozzarella cheese in the center and roll the rice into a ball, ensuring the cheese is completely covered.
  • Heat vegetable oil in a deep pan over medium heat.
  • Carefully place the rice balls in the hot oil and fry until golden brown on all sides.
  • Remove from oil and place on a paper towel to drain excess oil.
  • Serve hot and enjoy!
