Instructions
- In a mixing bowl, combine cooked rice, Parmesan cheese, eggs, breadcrumbs, parsley, salt, and pepper.
- Take a small amount of the rice mixture and flatten it in your palm.
- Place a cube of mozzarella cheese in the center and roll the rice into a ball, ensuring the cheese is completely covered.
- Heat vegetable oil in a deep pan over medium heat.
- Carefully place the rice balls in the hot oil and fry until golden brown on all sides.
- Remove from oil and place on a paper towel to drain excess oil.
- Serve hot and enjoy!
