- 4 boneless, skinless chicken breasts
- 1 bunch asparagus, ends trimmed
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Using a sharp knife, cut a pocket into each chicken breast.
- Season the inside of the chicken breasts with salt, pepper, and garlic powder.
- Stuff each chicken breast with 4-5 asparagus spears and a handful of mozzarella cheese.
- Secure the pockets with toothpicks to keep the filling inside.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the chicken breasts for 3-4 minutes on each side until browned.
- Sprinkle Parmesan cheese on top of each chicken breast.
- Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F).
- Serve hot and enjoy!
Notes
- For extra flavor, you can add a squeeze of lemon juice over the chicken after baking.
- You can substitute the mozzarella with provolone or another mild cheese if desired.
