Description

Tender chicken breasts are stuffed with fresh asparagus and melted mozzarella cheese, then seared and baked to perfection. Topped with Parmesan, this dish offers a savory, flavorful meal for any occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 bunch asparagus, ends trimmed
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Using a sharp knife, cut a pocket into each chicken breast.
  • Season the inside of the chicken breasts with salt, pepper, and garlic powder.
  • Stuff each chicken breast with 4-5 asparagus spears and a handful of mozzarella cheese.
  • Secure the pockets with toothpicks to keep the filling inside.
  • Heat olive oil in a large oven-safe skillet over medium-high heat.
  • Sear the chicken breasts for 3-4 minutes on each side until browned.
  • Sprinkle Parmesan cheese on top of each chicken breast.
  • Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F).
  • Serve hot and enjoy!

Notes

  • For extra flavor, you can add a squeeze of lemon juice over the chicken after baking.
  • You can substitute the mozzarella with provolone or another mild cheese if desired.
  • Ensure to remove the toothpicks before serving.
