- 1/4 cup shredded cheddar cheese
- Salt and pepper to taste

Instructions
- Preheat the oven to 375°F (190°C).
- Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels.
- Cut the croissants in half and hollow out the insides to form a boat shape.
- Place the croissants on a baking sheet.
- Crack an egg into each croissant boat.
- Crumble the cooked bacon on top of the eggs.
- Sprinkle the shredded cheddar cheese over the bacon and eggs.
- Season with salt and pepper.
- Bake in the preheated oven for 15-20 minutes, or until the eggs are set to your liking.
- Garnish with chopped chives before serving.
Notes
- You can substitute the cheddar cheese with other cheeses like Swiss or mozzarella for different flavors.
- If you prefer your eggs cooked more or less, adjust the baking time to your liking.
- These boats are also delicious with a drizzle of hot sauce or a dollop of sour cream for extra flavor.
- To make this dish even heartier, add some sautéed spinach or mushrooms inside the croissant before baking.
