Juicy, tender chicken thighs are baked to perfection with a tangy barbecue sauce and caramelized onions. This easy, flavorful dish makes for a perfect weeknight meal or dinner party treat.


Ingredients

  • 8 chicken thighs, bone-in and skin-on
  • 1 large onion, peeled and sliced into rings
  • 1 cup barbecue sauce (use your favorite brand)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Rub the chicken thighs with olive oil and season generously with salt, pepper, smoked paprika, garlic powder, and onion powder.
  • In a large baking dish, arrange the sliced onion rings on the bottom. Place the seasoned chicken thighs on top of the onions.
  • In a small bowl, whisk together the barbecue sauce and apple cider vinegar. Pour the barbecue sauce mixture over the chicken thighs.
  • Bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy.
  • Once cooked, garnish with chopped fresh parsley before serving.
  • Serve with your favorite sides and enjoy!

Notes

  • For an extra smoky flavor, add more smoked paprika or a dash of liquid smoke to the barbecue sauce.
  • You can use boneless, skinless chicken thighs for a quicker cook time, but bone-in thighs will yield a juicier result.
  • Serve with roasted vegetables, mashed potatoes, or a fresh salad for a complete meal.
