Baked Potato Casserole is the ultimate comfort food! This creamy, cheesy dish features tender potatoes layered with a rich cheese sauce, crispy bacon bits, and green onions, then baked to golden perfection. It’s the perfect side dish for any occasion and is sure to be a crowd-pleaser!


Ingredients

  • 6 large potatoes
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 2 cups milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1/2 cup bacon bits

Instructions

  • Preheat oven to 350°F (175°C).
  • Wash and peel the potatoes, then cut them into small cubes.
  • Boil the potatoes in a pot of water until tender, then drain and set aside.
  • In a saucepan, melt the butter over medium heat.
  • Stir in the flour until smooth, then gradually add in the milk.
  • Cook and stir until the mixture thickens, then season with salt and pepper.
  • Remove from heat and stir in 1 1/2 cups of cheddar cheese until melted.
  • In a greased baking dish, layer half of the potatoes, green onions, and bacon bits.
  • Pour half of the cheese sauce over the potato mixture.
  • Repeat the layers with the remaining ingredients.
  • Sprinkle the remaining 1/2 cup of cheddar cheese on top.
  • Bake in the preheated oven for 25-30 minutes, or until bubbly and golden brown.

Notes

  • You can add sour cream on top after baking for extra creaminess.
  • For a spicy twist, try adding some diced jalapeños to the layers.
  • This dish can be made ahead and stored in the fridge for up to 2 days before baking.
