- 6 large potatoes
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 2 cups milk
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups shredded cheddar cheese
- 1/2 cup chopped green onions
- 1/2 cup bacon bits
Instructions
- Preheat oven to 350°F (175°C).
- Wash and peel the potatoes, then cut them into small cubes.
- Boil the potatoes in a pot of water until tender, then drain and set aside.
- In a saucepan, melt the butter over medium heat.
- Stir in the flour until smooth, then gradually add in the milk.
- Cook and stir until the mixture thickens, then season with salt and pepper.
- Remove from heat and stir in 1 1/2 cups of cheddar cheese until melted.
- In a greased baking dish, layer half of the potatoes, green onions, and bacon bits.
- Pour half of the cheese sauce over the potato mixture.
- Repeat the layers with the remaining ingredients.
- Sprinkle the remaining 1/2 cup of cheddar cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until bubbly and golden brown.
Notes
- You can add sour cream on top after baking for extra creaminess.
- For a spicy twist, try adding some diced jalapeños to the layers.
- This dish can be made ahead and stored in the fridge for up to 2 days before baking.
