Description

This Banana Bread Cake is the perfect combination of soft, moist banana bread and creamy, tangy cream cheese frosting. A deliciously sweet treat that’s perfect for breakfast, dessert, or a snack. With the added crunch of walnuts and a rich cream cheese topping, this cake is a guaranteed crowd-pleaser.


Ingredients

  • 2 ripe bananas
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese
  • 1/4 cup butter
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  • In a mixing bowl, mash the bananas and set aside.
  • In a separate bowl, cream together the butter and sugar. Add eggs and vanilla extract, and mix well.
  • Stir in the mashed bananas.
  • In another bowl, combine the flour, baking soda, and salt. Gradually add to the banana mixture.
  • Fold in the chopped walnuts, if desired.
  • Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  • While the cake is baking, prepare the cream cheese frosting by beating the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract.
  • Once the cake has cooled, spread the frosting on top.

Notes

  • If you prefer a thicker layer of frosting, feel free to double the frosting ingredients.
  • You can swap walnuts for chocolate chips or another nut of your choice for variation.
  • For an even moister cake, add a tablespoon of sour cream or yogurt to the batter.
