- 2 ripe bananas
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chopped walnuts (optional)
- 8 oz cream cheese
- 1/4 cup butter
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a mixing bowl, mash the bananas and set aside.
- In a separate bowl, cream together the butter and sugar. Add eggs and vanilla extract, and mix well.
- Stir in the mashed bananas.
- In another bowl, combine the flour, baking soda, and salt. Gradually add to the banana mixture.
- Fold in the chopped walnuts, if desired.
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the cream cheese frosting by beating the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract.
- Once the cake has cooled, spread the frosting on top.
Notes
- If you prefer a thicker layer of frosting, feel free to double the frosting ingredients.
- You can swap walnuts for chocolate chips or another nut of your choice for variation.
- For an even moister cake, add a tablespoon of sour cream or yogurt to the batter.
