For the cupcakes:
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda

- 1/2 tsp cinnamon

- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup mashed bananas (about 1 large banana)

For the frosting:
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 tsp cinnamon
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Line a cupcake pan with paper liners.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a large bowl, beat softened butter, sugar, and brown sugar until light and fluffy. Add eggs and vanilla extract, mixing well.
- Mix in mashed bananas and sour cream until combined. Gradually add the dry ingredients, mixing until just combined.
- Spoon batter into the cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat cream cheese, softened butter, cinnamon, powdered sugar, and vanilla extract until smooth and creamy. Frost the cooled cupcakes.
Notes
For added texture, consider mixing in chopped nuts or chocolate chips into the batter. These cupcakes can also be stored in an airtight container in the refrigerator.
