- 4 ripe bananas, sliced
- 1/2 cup brown sugar
- 1/2 cup unsalted butter
- 1/4 cup dark rum
- 1 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 8 slices of bread
- 4 eggs
- 1/2 cup milk
- Butter, for cooking
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the brown sugar and stir until dissolved.
- Add the bananas, rum, cinnamon, and vanilla extract. Cook for 3-4 minutes, until the bananas are soft and the mixture thickens slightly.
- In a shallow dish, whisk together the eggs and milk.
- Dip each slice of bread into the egg mixture, then place in the skillet with the banana mixture.
- Cook for 2-3 minutes on each side, until golden brown.
- Serve the French toast with the banana mixture on top.
Notes
- For a non-alcoholic version, substitute the rum with a splash of vanilla extract or banana extract.
- You can use any bread of your choice, but thick slices like brioche or challah work best for French toast.
