Bananas:

  • 3 large bananas, sliced horizontally into thick coins

For Cooking:

  • 1 tablespoon unsalted butter

Pancake Batter:

  • 1½ cups all-purpose flour

  • 1 tablespoon baking powder

  • 2 tablespoons brown sugar

  • 1 teaspoon salt

  • ¾ cup milk

  • ½ cup sour cream

  • 2 large eggs

  • 1 teaspoon pure vanilla extract

To Serve:

  • Melted chocolate or maple syrup (optional for dipping)


Instructions

  • In a mixing bowl, whisk together flour, baking powder, brown sugar, and salt.

  • In another bowl, whisk milk, sour cream, eggs, and vanilla until smooth.

  • Pour wet ingredients into the dry ingredients and stir until just combined—do not overmix.

  • Heat a nonstick skillet or griddle over medium heat and melt butter.

  • Dip each banana slice into the pancake batter, fully coating it, then place it on the hot skillet.

  • Cook for 1–2 minutes per side, or until golden brown and puffed.

  • Transfer to a plate and repeat with remaining slices.

  • Serve warm with melted chocolate or maple syrup.

Notes

  • Use ripe, but firm bananas for easier handling.
