Instructions
- Preheat oven to 350°F. Grease and flour three 9-inch round cake pans.
- In a small bowl, mix mashed bananas with lemon juice. Stir in chopped pecans.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- In a medium bowl, combine flour, baking soda, and salt. Add to the creamed mixture and mix well.
- Stir in buttermilk until just combined. Fold in banana mixture.
- Pour batter into prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
