Description

Ingredients

  • 1 cup mashed ripe bananas
  • 1 teaspoon lemon juice
  • 1 cup chopped pecans
  • 1/2 cup butter, softened
  • 2 cups sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk

Instructions

  • Preheat oven to 350°F. Grease and flour three 9-inch round cake pans.
  • In a small bowl, mix mashed bananas with lemon juice. Stir in chopped pecans.
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  • In a medium bowl, combine flour, baking soda, and salt. Add to the creamed mixture and mix well.
  • Stir in buttermilk until just combined. Fold in banana mixture.
  • Pour batter into prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
