Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1/2 cup buttermilk
  • 1 cup chopped pecans

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, cream together butter and sugar until light and fluffy.
  • Beat in eggs one at a time, then stir in vanilla extract.
  • Mix in mashed bananas.
  • Gradually add dry ingredients alternately with buttermilk, starting and ending with dry ingredients.
  • Fold in chopped pecans.
  • Divide batter evenly among the prepared pans.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow cakes to cool in pans for 10 minutes, then turn out onto wire racks to cool completely.

Notes

Consider adding a caramel drizzle on top for extra indulgence.
