This decadent cheesecake is a delightful fusion of classic bananas foster and rich, creamy cheesecake. With a buttery graham cracker crust, smooth cream cheese filling, and a topping of caramelized bananas, it’s a showstopper dessert that’s sure to impress.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 eggs
  • 2 ripe bananas, mashed
  • 1/4 cup dark rum
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/2 tsp cinnamon
  • 2 bananas, sliced

Instructions

  • Preheat oven to 350°F (175°C).
  • In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  • In a large bowl, beat cream cheese, 1 cup sugar, and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition. Stir in mashed bananas.
  • Pour the cream cheese mixture over the crust in the springform pan. Bake for 50-55 minutes, or until the center is almost set.
  • While the cheesecake is baking, make the bananas foster topping. In a skillet, melt 1/4 cup butter. Stir in brown sugar, rum, and cinnamon. Add sliced bananas and cook until bananas are caramelized.
  • Once the cheesecake is done baking, let it cool slightly. Top with the bananas foster mixture.
  • Chill the cheesecake in the refrigerator for at least 4 hours before serving.

Notes

  • For an extra rich flavor, allow the cheesecake to chill overnight.
  • If you’re not a fan of dark rum, you can substitute with a lighter rum or omit the alcohol for a non-alcoholic version.
  • Serve with whipped cream or a drizzle of additional caramel sauce for extra indulgence.
