Ingredients
Scale
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 eggs
- 2 ripe bananas, mashed
- 1/4 cup dark rum
- 1/2 cup brown sugar
- 1/4 cup unsalted butter
- 1/2 tsp cinnamon
- 2 bananas, sliced
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese, 1 cup sugar, and vanilla extract until smooth. Add eggs one at a time, mixing well after each addition. Stir in mashed bananas.
- Pour the cream cheese mixture over the crust in the springform pan. Bake for 50-55 minutes, or until the center is almost set.
- While the cheesecake is baking, make the bananas foster topping. In a skillet, melt 1/4 cup butter. Stir in brown sugar, rum, and cinnamon. Add sliced bananas and cook until bananas are caramelized.
- Once the cheesecake is done baking, let it cool slightly. Top with the bananas foster mixture.
- Chill the cheesecake in the refrigerator for at least 4 hours before serving.
Notes
- For an extra rich flavor, allow the cheesecake to chill overnight.
- If you’re not a fan of dark rum, you can substitute with a lighter rum or omit the alcohol for a non-alcoholic version.
- Serve with whipped cream or a drizzle of additional caramel sauce for extra indulgence.
