Ingredients

1 1/2 pounds thin-sliced chicken breasts

Kosher salt, fresh black pepper, and garlic powder for seasoning

1/2 cup all-purpose flour

1/4 cup cornstarch

1 cup buttermilk

1 tablespoon hot sauce

1 large egg

2 cups (or more as needed) Panko breadcrumbs

Vegetable or canola oil for frying

12 slices mozzarella cheese

12 slider rolls
For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon hot sauce (optional for extra heat)
Instructions

Prepare the Chicken:

Season the chicken breasts with kosher salt, black pepper, and garlic powder.

In a shallow bowl, whisk together flour and cornstarch.

In another bowl, mix the buttermilk and hot sauce.

In a third bowl, place the panko breadcrumbs.

Bread the Chicken:

Dip each piece of chicken into the flour mixture, then into the buttermilk mixture, and finally coat with the panko breadcrumbs.

Fry the Chicken:

In a large pan or skillet, heat vegetable or canola oil over medium-high heat.

Fry the chicken pieces in batches until golden brown and crispy, about 4-5 minutes per side, depending on the thickness of the chicken.

Drain on paper towels.

Place one slice of mozzarella cheese on each piece of chicken while it’s still hot, allowing the cheese to melt slightly.
