Ingredients
Chicken:
-
1½ pounds boneless, skinless chicken breasts, cut into 1½-inch cubes
Marinade:
-
3 cloves garlic, minced
-
¾ cup beer (lager or ale recommended)
-
⅓ cup honey
-
1 teaspoon red pepper flakes
-
1 teaspoon Dijon mustard
-
¼ cup low-sodium soy sauce
-
1 tablespoon olive oil
Garnish:
-
2 tablespoons fresh cilantro, chopped
Instructions
-
In a large bowl, whisk together garlic, beer, honey, red pepper flakes, Dijon mustard, soy sauce, and olive oil.
-
Add chicken cubes to the marinade, toss to coat, and cover. Marinate in the refrigerator for at least 2 hours, or overnight for deeper flavor.
-
Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes.
-
Thread the marinated chicken onto skewers. Discard the used marinade.
-
Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
- Remove from grill and rest for a few minutes. Garnish with chopped cilantro before serving.
Notes
-
Choose a mild or medium-bodied beer to complement the marinade.
-
You can substitute chicken thighs for more juiciness.
- Serve with rice, grilled veggies, or inside flatbreads for a complete meal.
