Description

A quick and flavorful Beef in Oyster Sauce Stir-Fry featuring tender beef slices tossed in a rich oyster sauce glaze, enhanced with fresh vegetables and aromatic garlic. This savory dish comes together in under 30 minutes, making it an ideal choice for busy weeknights while delivering a perfect balance of sweet, salty, and umami flavors.

Ingredients

Scale

Beef and Marinade

  • 300g flank steak or sirloin, thinly sliced against the grain
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • Pinch of sugar

Sauce

  • 3 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 2 tbsp water or broth
  • 1 tsp sesame oil
  • 1 tsp cornstarch

Aromatics

  • 2 cloves garlic, freshly minced
  • Optional: 1 tsp fresh ginger, minced

Vegetables

  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 1 cup broccoli florets

Others

  • 2 tbsp cooking oil (neutral oil like canola or vegetable oil)

Instructions

  1. Prepare the Beef and Marinade: Slice the beef thinly against the grain for maximum tenderness. Marinate with soy sauce, cornstarch, and a pinch of sugar to tenderize and infuse flavor.
  2. Mix the Sauce: In a bowl, combine oyster sauce, soy sauce, water or broth, sesame oil, and cornstarch. Stir until smooth and set aside.
  3. Cook the Aromatics: Heat the cooking oil in a wok or large skillet over medium-high heat. Add minced garlic and optional ginger, cooking until fragrant, about 30 seconds.
  4. Stir-Fry the Beef: Add marinated beef slices to the wok. Stir-fry quickly until meat begins to brown but is not fully cooked, about 2 minutes.
  5. Add Vegetables and Sauce: Toss in sliced bell peppers, onions, and broccoli. Pour the prepared sauce over the ingredients and stir continuously until beef is tender and vegetables are crisp-tender.
  6. Finish and Serve: Give the stir-fry a final toss to ensure all ingredients are evenly coated with the sauce. Remove from heat and serve hot with steamed rice or noodles.

Notes

  • Freeze beef for 15 minutes before slicing to achieve thin, even slices.
  • Use high heat to quickly sear the beef and lock in juices.
  • Avoid overcrowding the pan; stir-fry in batches if necessary.
  • Add sauce at the end and stir quickly to prevent burning or thinning.
  • Add vegetables in stages according to their cooking times to maintain texture.
  • Optional toppings include chopped green onions, toasted sesame seeds, or fresh cilantro.
