1 ¼ cups sour cream
-
4 ounces cream cheese, softened
-
1 tablespoon cornstarch
-
2 to 2 ½ cups Colby jack cheese, shredded
Instructions
-
Preheat oven to 350°F (175°C).
-
Cook noodles according to package instructions until al dente. Drain and set aside.
-
Cook beef mixture: In a large skillet, heat olive oil over medium heat. Add ground beef and chopped onion; cook until beef is browned and onion is soft. Drain excess fat.
-
Stir in salt, pepper, tomato paste, and garlic. Cook 2 minutes.
-
Add drained diced tomatoes & green chilies. Simmer for 5 minutes, stirring occasionally. Remove from heat.
-
Prepare cheese sauce: In a medium bowl, mix sour cream, softened cream cheese, and cornstarch until smooth and well combined.
-
Assemble casserole: In a large bowl, combine cooked noodles, beef mixture, and sour cream mixture. Mix gently to combine.
-
Transfer half of the noodle mixture into a greased 9×13 baking dish. Sprinkle with half of the shredded Colby jack cheese. Repeat layers with remaining noodles and cheese.
-
Bake: Cover with foil and bake for 25 minutes. Remove foil and bake another 10 minutes or until cheese is melted and bubbly.
- Let casserole cool for 5 minutes before serving.
Notes
-
Substitute cream cheese with Neufchâtel cheese for lower fat.
-
For a spicier version, add extra diced green chilies or jalapeños.
-
Leftovers store well refrigerated for up to 3 days and freeze nicely.
