Description

Beef Lombardi Casserole is a hearty and comforting baked pasta dish combining seasoned ground beef, tangy tomatoes with green chilies, and a creamy cheesy sauce layered with wide egg noodles. Rich and flavorful, it’s a crowd-pleaser perfect for family dinners or potlucks.


Ingredients

  • 1 tablespoon olive oil

  • 1 lb lean ground beef

  • 1/3 cup chopped onion

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 4 tablespoons tomato paste

  • 3 garlic cloves, minced

  • 3 (10-ounce) cans Ro-tel Original Diced Tomatoes & Green Chilies, drained

  • 1 package (12 oz) wide egg noodles

  • 1 ¼ cups sour cream

  • 4 ounces cream cheese, softened

  • 1 tablespoon cornstarch

  • 2 to 2 ½ cups Colby jack cheese, shredded


Instructions

  • Preheat oven to 350°F (175°C).

  • Cook noodles according to package instructions until al dente. Drain and set aside.

  • Cook beef mixture: In a large skillet, heat olive oil over medium heat. Add ground beef and chopped onion; cook until beef is browned and onion is soft. Drain excess fat.

  • Stir in salt, pepper, tomato paste, and garlic. Cook 2 minutes.

  • Add drained diced tomatoes & green chilies. Simmer for 5 minutes, stirring occasionally. Remove from heat.

  • Prepare cheese sauce: In a medium bowl, mix sour cream, softened cream cheese, and cornstarch until smooth and well combined.

  • Assemble casserole: In a large bowl, combine cooked noodles, beef mixture, and sour cream mixture. Mix gently to combine.

  • Transfer half of the noodle mixture into a greased 9×13 baking dish. Sprinkle with half of the shredded Colby jack cheese. Repeat layers with remaining noodles and cheese.

  • Bake: Cover with foil and bake for 25 minutes. Remove foil and bake another 10 minutes or until cheese is melted and bubbly.

  • Let casserole cool for 5 minutes before serving.

Notes

  • Substitute cream cheese with Neufchâtel cheese for lower fat.

  • For a spicier version, add extra diced green chilies or jalapeños.

  • Leftovers store well refrigerated for up to 3 days and freeze nicely.
