- 1 lb beef sirloin, cut into thin strips
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup beef broth
- 1 cup sour cream
- 2 tbsp flour
- Salt and pepper to taste
- Egg noodles, cooked according to package instructions
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add beef strips and cook until browned. Remove from skillet and set aside.
- In the same skillet, add onion and garlic. Cook until softened.
- Add mushrooms and cook until they release their liquid.
- Sprinkle flour over the mushroom mixture and stir to combine.
- Slowly stir in beef broth, scraping up any browned bits from the bottom of the skillet.
- Return beef to the skillet and simmer until sauce thickens.
- Stir in sour cream and season with salt and pepper.
- Serve over cooked egg noodles.
Notes
- For a lighter version, you can use Greek yogurt instead of sour cream.
- You can add a sprinkle of fresh parsley or chives for garnish.
