This Beef & Vegetable Stew combines tender chunks of beef with hearty vegetables in a savory broth enriched with French onion flavor. It’s a simple, comforting dish that’s perfect for cozy dinners. The beef and vegetables simmer together, creating a deliciously flavorful stew that warms you from the inside out.


Ingredients

  • 1 lb beef (chuck or stew meat, cut into cubes)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, peeled and chopped
  • 2 potatoes, peeled and diced
  • 1 zucchini, chopped
  • 4 cups beef broth
  • 1 tbsp soy sauce
  • Salt and pepper, to taste

Instructions

  • In a large pot, heat a bit of oil over medium-high heat. Add the beef and brown on all sides, about 5 minutes.
  • Add the chopped onion and minced garlic to the pot, cooking for 2-3 minutes, until fragrant and softened.
  • Stir in the chopped carrot, potatoes, and zucchini.
  • Pour in the beef broth and soy sauce, then season with salt and pepper to taste.
  • Bring to a simmer and cook for 25-30 minutes, or until the vegetables are tender and the beef is cooked through.
  • Serve hot and enjoy!

Notes

  • If you prefer a thicker stew, you can mash some of the potatoes in the pot or stir in a bit of cornstarch mixed with water.
  • For added French onion flavor, you can sauté the onions until they are caramelized before adding the garlic and other ingredients.
