Description

These Berry Cheesecake Bites are a delightful, no-bake dessert featuring a smooth, creamy cheesecake layer on a crunchy graham cracker crust, topped with fresh mixed berries. A perfect, refreshing treat for summer gatherings or any occasion.

  • 1 cup graham cracker crumbs
  • 2 tbsp sugar
  • 1/4 cup butter, melted
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup whipped cream
  • 1 cup mixed berries (such as strawberries, blueberries, raspberries, and blackberries)

Instructions

  • In a bowl, combine graham cracker crumbs, 2 tbsp sugar, and melted butter. Press this mixture into the bottom of a 9×9 inch dish to form the crust.
  • In a separate bowl, beat the cream cheese, 1/4 cup sugar, and vanilla extract until smooth. Gently fold in the whipped cream until fully combined.
  • Spread the cream cheese mixture evenly over the graham cracker crust.
  • Top with mixed berries, distributing them evenly over the cheesecake layer.
  • Refrigerate for at least 2 hours to allow the cheesecake to set before serving.

Notes

  • You can use any combination of fresh berries, or even substitute with other fruits like kiwi or mango for variation.
  • Make sure to refrigerate the dessert for the full 2 hours to allow it to firm up.
