Instructions
- In a bowl, combine graham cracker crumbs, 2 tbsp sugar, and melted butter. Press this mixture into the bottom of a 9×9 inch dish to form the crust.
- In a separate bowl, beat the cream cheese, 1/4 cup sugar, and vanilla extract until smooth. Gently fold in the whipped cream until fully combined.
- Spread the cream cheese mixture evenly over the graham cracker crust.
- Top with mixed berries, distributing them evenly over the cheesecake layer.
- Refrigerate for at least 2 hours to allow the cheesecake to set before serving.
