Description

This Berry Croissant Bake is a rich, custardy breakfast casserole loaded with juicy berries, buttery croissants, and a hint of vanilla. Creamy, sweet, and perfect for brunch or holidays, it’s easy to make ahead and always a crowd-pleaser.


Ingredients

  • 4 large croissants, broken into small pieces (pre-baked, not raw dough)

  • 1 cup sliced strawberries

  • 1/2 cup blueberries

  • 1/2 cup raspberries

  • 1 block (8 oz) cream cheese, softened

  • 2/3 cup granulated sugar

  • 3/4 cup milk

  • 2 large eggs

  • 2 teaspoons vanilla extract


Instructions

  • Preheat Oven:
    Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch or similar baking dish.

  • Layer the Croissants and Berries:
    Spread half of the croissant pieces in the bottom of the dish. Add half of the berries on top. Repeat with remaining croissants and berries.

  • Make the Cream Cheese Mixture:
    In a large bowl, beat the softened cream cheese and sugar until smooth. Add eggs, milk, and vanilla extract. Whisk until well combined.

  • Assemble and Bake:
    Pour the cream cheese mixture evenly over the croissant and berry layers. Gently press down to help everything soak. Let sit for 10–15 minutes, then bake uncovered for 35–40 minutes, or until golden brown and the center is set.

  • Serve:
    Let cool slightly before serving. Enjoy warm, optionally dusted with powdered sugar or a drizzle of maple syrup.

Notes

  • Can be assembled the night before and baked fresh in the morning.

  • Substitute cream for milk for an even richer texture.

  • Try adding lemon zest for a bright citrus twist.
