Description

This Best Homemade Meatloaf recipe is a family favorite that combines a tender, juicy meat mixture with a flavorful glaze on top. The savory blend of ground beef, seasonings, and breadcrumbs is perfectly complemented by a sweet and tangy ketchup glaze. It’s the ultimate comfort food for dinner, great served with mashed potatoes or vegetables!

Ingredients

Scale

Meatloaf:

  • 2 pounds 80%-90% ground beef (or ground turkey, or 1 pound ground pork and 1 pound ground beef)
  • ½ cup panko breadcrumbs
  • ⅓ cup beef broth (or milk)
  • 2 large eggs, whisked
  • 23 Tablespoons finely chopped fresh parsley
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons ketchup
  • 1 ¼ teaspoons Kosher salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Glaze:

  • ⅔ cup ketchup or BBQ sauce (or a mix of both)
  • 23 Tablespoons light brown sugar

Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease a 9×5-inch loaf pan.
  • In a large bowl, combine the ground beef, panko breadcrumbs, beef broth, whisked eggs, parsley, Worcestershire sauce, ketchup, salt, pepper, garlic powder, and onion powder.
  • Mix all the ingredients together until fully combined, but be careful not to overwork the meat mixture.
  • Transfer the meat mixture into the prepared loaf pan and shape it into a loaf.
  • In a small bowl, mix together the ketchup (or BBQ sauce) and brown sugar to create the glaze.
  • Spread half of the glaze mixture evenly over the top of the meatloaf.
  • Bake the meatloaf in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C).
  • After baking, spread the remaining glaze over the meatloaf and return it to the oven for an additional 5-10 minutes to set the glaze.
  • Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For an extra crispy crust, you can broil the meatloaf for 2-3 minutes after adding the glaze.
  • If you prefer a leaner meatloaf, you can substitute ground turkey for the beef.
  • The meatloaf can be made ahead of time and stored in the refrigerator for up to 3 days. It also freezes well for up to 3 months.
