Meatloaf:
- 2 pounds 80%-90% ground beef (or ground turkey, or 1 pound ground pork and 1 pound ground beef)
- ½ cup panko breadcrumbs
- ⅓ cup beef broth (or milk)
- 2 large eggs, whisked
- 2–3 Tablespoons finely chopped fresh parsley
- 2 Tablespoons Worcestershire sauce
- 2 Tablespoons ketchup
- 1 ¼ teaspoons Kosher salt
- ¼ teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Glaze:
- ⅔ cup ketchup or BBQ sauce (or a mix of both)
- 2–3 Tablespoons light brown sugar
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×5-inch loaf pan.
- In a large bowl, combine the ground beef, panko breadcrumbs, beef broth, whisked eggs, parsley, Worcestershire sauce, ketchup, salt, pepper, garlic powder, and onion powder.
- Mix all the ingredients together until fully combined, but be careful not to overwork the meat mixture.
- Transfer the meat mixture into the prepared loaf pan and shape it into a loaf.
- In a small bowl, mix together the ketchup (or BBQ sauce) and brown sugar to create the glaze.
- Spread half of the glaze mixture evenly over the top of the meatloaf.
- Bake the meatloaf in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C).
- After baking, spread the remaining glaze over the meatloaf and return it to the oven for an additional 5-10 minutes to set the glaze.
- Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
- For an extra crispy crust, you can broil the meatloaf for 2-3 minutes after adding the glaze.
- If you prefer a leaner meatloaf, you can substitute ground turkey for the beef.
