These bite-sized ricotta truffles are the perfect combination of creamy ricotta cheese and rich semisweet chocolate. Coated in cocoa powder and chilled to perfection, these truffles are a delightful treat for any chocolate lover.

- 1 cup whole milk ricotta cheese
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup semisweet chocolate chips
- 1/4 cup unsweetened cocoa powder
Instructions
- In a medium mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and well combined.
- Roll the mixture into small truffle-sized balls and place them on a baking sheet lined with parchment paper. Freeze for 30 minutes to firm up.
- In a microwave-safe bowl, melt the semisweet chocolate chips in 30-second intervals, stirring in between, until smooth and fully melted.
- Dip each ricotta ball into the melted chocolate, ensuring each truffle is evenly coated. Place back on the parchment-lined baking sheet.
- Refrigerate the coated truffles for another 30 minutes to set the chocolate.
- Once chilled, roll each truffle in unsweetened cocoa powder for a finishing touch before serving.
Notes
- For added flavor, you can substitute the cocoa powder with finely chopped nuts or coconut flakes for a different coating.
- Make sure to refrigerate the truffles to allow the chocolate to harden properly.
