Ingredients
Scale
- 4 boneless skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 2 cups sliced mushrooms
- 2 cloves garlic, minced
- 1 tablespoon freshly ground black pepper
- ½ cup chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon Worcestershire sauce
- 1 teaspoon cornstarch (optional)
- Salt, to taste
- Fresh parsley, chopped (for garnish)
Instructions
-
Prepare the Chicken:
- Season chicken with salt and ½ tablespoon black pepper on both sides.
-
Cook the Chicken:
- Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 6-7 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
-
Cook the Mushrooms:
- In the same skillet, add mushrooms and sauté for 4-5 minutes until softened and browned. Add garlic and cook for an additional 1 minute.
-
Make the Sauce:
- Add chicken broth, soy sauce, Worcestershire sauce, and the remaining ½ tablespoon of black pepper. Stir well, scraping any browned bits from the bottom of the skillet. If desired, mix cornstarch with a small amount of water and stir into the sauce to thicken it.
-
Combine and Simmer:
- Return the chicken to the skillet, spooning sauce and mushrooms over the top. Simmer for 2-3 minutes, adjusting seasoning to taste.
-
Serve:
- Garnish with freshly chopped parsley. Serve over rice, mashed potatoes, or vegetables for a complete meal.
Notes
- Adjusting Thickness: If you prefer a thicker sauce, add cornstarch mixed with water as needed.
- Serving Ideas: This dish pairs wonderfully with steamed rice, mashed potatoes, or roasted vegetables.
