Description

Ingredients

  • 4 boneless skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 2 cups sliced mushrooms
  • 2 cloves garlic, minced
  • 1 tablespoon freshly ground black pepper
  • ½ cup chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon cornstarch (optional)
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Chicken:

    • Season chicken with salt and ½ tablespoon black pepper on both sides.
  • Cook the Chicken:

    • Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 6-7 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  • Cook the Mushrooms:

    • In the same skillet, add mushrooms and sauté for 4-5 minutes until softened and browned. Add garlic and cook for an additional 1 minute.
  • Make the Sauce:

    • Add chicken broth, soy sauce, Worcestershire sauce, and the remaining ½ tablespoon of black pepper. Stir well, scraping any browned bits from the bottom of the skillet. If desired, mix cornstarch with a small amount of water and stir into the sauce to thicken it.
  • Combine and Simmer:

    • Return the chicken to the skillet, spooning sauce and mushrooms over the top. Simmer for 2-3 minutes, adjusting seasoning to taste.
  • Serve:

    • Garnish with freshly chopped parsley. Serve over rice, mashed potatoes, or vegetables for a complete meal.
