Description

This Blueberry Cottage Cheese Breakfast Bake is a delicious and nutritious way to start your day. It’s perfect for breakfast or a light brunch, and can easily be customized with your favorite fruits or nuts.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup milk
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1 1/2 cups fresh or frozen blueberries (reserve some for topping)

Instructions

  • Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  • In a large bowl, whisk together cottage cheese, eggs, milk, maple syrup or honey, vanilla extract, cinnamon, and salt.
  • Stir in oats and baking powder.
  • Gently fold in blueberries, reserving some for the topping.
  • Pour the mixture into the prepared baking dish and spread it evenly.
  • Top with the reserved blueberries.
  • Bake for 30-35 minutes or until set and lightly golden.
  • Cool for 5-10 minutes before slicing. Serve warm.

Notes

  • You can substitute raspberries or chopped strawberries for the blueberries.
  • Add chopped nuts for extra flavor.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave.
