Instructions
- Prepare Blueberry Filling: In a small saucepan, combine blueberries, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, until blueberries break down and the mixture thickens, about 5-7 minutes. Let cool.
- Make Cream Cheese Mixture: In a medium bowl, mix the softened cream cheese with powdered sugar and vanilla extract until smooth.
- Assemble Egg Rolls: Lay an egg roll wrapper on a flat surface with one corner facing you. Spread 1-2 tablespoons of the cream cheese mixture in the center of the wrapper. Top with 1 tablespoon of the blueberry filling. Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Seal the edges with a little water.
