For the cookies:
- 1 cup blueberries (fresh or frozen)
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice

- 1/2 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
For the glaze:
- 1/4 cup powdered sugar
- 2 tablespoons lemon juice
- 1/4 teaspoon lemon zest
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
- Add the egg, vanilla extract, lemon juice, and lemon zest. Mix until well combined.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Gently fold in the blueberries. Be careful not to crush them.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges of the cookies are lightly golden.
- While the cookies cool, prepare the glaze. In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
- Once the cookies have cooled slightly, drizzle the glaze over the top of each cookie.
- Allow the glaze to set before serving.
Notes
- If using frozen blueberries, do not thaw them before adding them to the dough to prevent the dough from becoming too wet.
- These cookies can be stored in an airtight container for up to 5 days.
- For a thicker glaze, add more powdered sugar as needed.
