Description

These Blueberry Lemon Cookies combine the sweet and tangy flavors of fresh blueberries and zesty lemon for a refreshing treat. For the cookies:

  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest

For the glaze:

  • 1/4 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1/4 teaspoon lemon zest

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  • Add the egg, vanilla extract, lemon juice, and lemon zest. Mix until well combined.
  • Gradually add the dry ingredients to the wet mixture and stir until just combined.
  • Gently fold in the blueberries. Be careful not to crush them.
  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges of the cookies are lightly golden.
  • While the cookies cool, prepare the glaze. In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
  • Once the cookies have cooled slightly, drizzle the glaze over the top of each cookie.
  • Allow the glaze to set before serving.

Notes

  • If using frozen blueberries, do not thaw them before adding them to the dough to prevent the dough from becoming too wet.
  • These cookies can be stored in an airtight container for up to 5 days.
  • For a thicker glaze, add more powdered sugar as needed.
