Description

Juicy, tender chicken breasts are stuffed with a creamy broccoli and cheddar mixture, then seared to perfection and topped with melted cheese. This dish is a savory and comforting meal that combines rich flavors with a healthy veggie twist. It’s a great dinner idea for the whole family, packed with protein and cheesy goodness.

For the Stuffing:

  • 1 cup fresh broccoli florets, steamed and chopped (or 1 cup frozen broccoli, thawed and chopped)
  • 1/2 cup shredded sharp cheddar cheese (plus extra for topping)
  • 1/4 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper, to taste

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tbsp olive oil (for searing)
  • 1/2 tsp paprika (optional, for extra flavor and color)

For the Topping:

  • 1/4 cup shredded sharp cheddar cheese
  • 1 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a medium bowl, combine the steamed and chopped broccoli, shredded cheddar, cream cheese, Parmesan, garlic powder, onion powder, salt, and pepper. Mix well to combine.
  • Season both sides of the chicken breasts with salt, pepper, and paprika (if using).
  • Using a sharp knife, cut a pocket into each chicken breast, making sure not to slice all the way through. Stuff each chicken breast with the broccoli mixture, securing the opening with toothpicks if necessary.
  • Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, sear the stuffed chicken breasts for 2-3 minutes per side until golden brown.
  • Sprinkle the top of each stuffed chicken breast with the extra shredded cheddar cheese.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 74°C) and the cheese is melted and bubbly.
  • Remove the chicken from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.

Notes

  • For a lighter option, you can use low-fat cream cheese or reduced-fat cheese.
  • Be careful not to overstuff the chicken, as it may cause the stuffing to spill out while cooking.
