A vibrant, flavorful pasta dish featuring tender chicken, sweet cherry tomatoes, fresh basil, and a tangy balsamic vinegar sauce. Topped with melted mozzarella cheese, this bruschetta-inspired pasta is the perfect weeknight dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 8 oz penne pasta
  • 1/4 cup fresh basil, chopped
  • 1/2 cup shredded mozzarella cheese

Instructions

  • Season chicken breasts with salt and pepper, then cook in olive oil over medium heat until cooked through. Remove and set aside.
  • In the same pan, add cherry tomatoes and garlic. Cook until tomatoes start to soften.
  • Stir in balsamic vinegar and let simmer for 5 minutes.
  • Cook penne pasta according to package instructions.
  • Slice chicken and add back to the pan with the tomato mixture.
  • Toss in cooked pasta and fresh basil, then top with mozzarella cheese.
  • Serve hot and enjoy!

Notes

  • You can substitute the chicken with grilled shrimp for a seafood version.
  • If you prefer a creamier sauce, you can stir in a little heavy cream or cream cheese at the end.
  • Add more balsamic vinegar if you like a stronger tangy flavor.
