- 1 lb boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tbsp olive oil
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 1/4 cup balsamic vinegar
- 8 oz penne pasta
- 1/4 cup fresh basil, chopped
- 1/2 cup shredded mozzarella cheese
Instructions
- Season chicken breasts with salt and pepper, then cook in olive oil over medium heat until cooked through. Remove and set aside.
- In the same pan, add cherry tomatoes and garlic. Cook until tomatoes start to soften.
- Stir in balsamic vinegar and let simmer for 5 minutes.
- Cook penne pasta according to package instructions.
- Slice chicken and add back to the pan with the tomato mixture.
- Toss in cooked pasta and fresh basil, then top with mozzarella cheese.
- Serve hot and enjoy!
Notes
- You can substitute the chicken with grilled shrimp for a seafood version.
- If you prefer a creamier sauce, you can stir in a little heavy cream or cream cheese at the end.
- Add more balsamic vinegar if you like a stronger tangy flavor.
