Description

This Burrata & Olive Pesto Sandwich with Zucchini combines creamy burrata cheese, smoky grilled zucchini, and vibrant olive pesto between slices of perfectly toasted bread. It’s a deliciously fresh and satisfying vegetarian sandwich.


Ingredients

Scale
  • 1 large zucchini, sliced
  • 4 slices of your favorite bread
  • 1/2 cup olive pesto
  • 1 burrata cheese ball
  • Salt and pepper to taste

Instructions

  • Heat a grill pan over medium heat and grill the zucchini slices until tender, about 2-3 minutes per side.
  • Toast the bread slices until golden brown.
  • Spread the olive pesto on one side of each bread slice.
  • Place the grilled zucchini on top of two of the bread slices.
  • Tear the burrata cheese and place it on top of the zucchini.
  • Season with salt and pepper.
  • Top with the remaining bread slices to form sandwiches.
  • Cut the sandwiches in half and serve.

Notes

  • For added flavor, try adding a few fresh basil leaves or a drizzle of olive oil.
  • If burrata isn’t available, fresh mozzarella can be used as a substitute.
  • This sandwich pairs well with a side salad or a fresh vegetable soup.
