Description

A comforting and flavorful dish featuring tender jumbo pasta shells stuffed with a savory mixture of ground turkey sausage, roasted butternut squash, and a blend of cheeses. Perfect for a hearty family meal or special gathering.


Ingredients

  • 1 lb ground turkey sausage
  • 1 butternut squash, peeled and diced
  • 1 box jumbo pasta shells
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh sage
  • Salt and pepper to taste
  • Olive oil

Instructions

  • Preheat oven to 375°F.
  • In a large skillet, cook the ground turkey sausage until browned. Remove from skillet and set aside.
  • In the same skillet, add a drizzle of olive oil and cook the butternut squash until tender.
  • In a large pot of boiling water, cook the jumbo pasta shells according to package instructions. Drain and set aside.
  • In a large bowl, combine the cooked turkey sausage, butternut squash, ricotta cheese, mozzarella cheese, Parmesan cheese, sage, salt, and pepper.
  • Stuff each pasta shell with the mixture and place in a baking dish.
  • Cover the dish with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until bubbly and golden.
  • Serve hot and enjoy!

Notes

  • You can substitute ground turkey sausage with regular sausage or even chicken sausage, depending on your preference.
  • For extra flavor, you can add a pinch of red pepper flakes or garlic powder to the filling.
