- 1 lb ground turkey sausage
- 1 butternut squash, peeled and diced
- 1 box jumbo pasta shells
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh sage
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat oven to 375°F.
- In a large skillet, cook the ground turkey sausage until browned. Remove from skillet and set aside.
- In the same skillet, add a drizzle of olive oil and cook the butternut squash until tender.
- In a large pot of boiling water, cook the jumbo pasta shells according to package instructions. Drain and set aside.
- In a large bowl, combine the cooked turkey sausage, butternut squash, ricotta cheese, mozzarella cheese, Parmesan cheese, sage, salt, and pepper.
- Stuff each pasta shell with the mixture and place in a baking dish.
- Cover the dish with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until bubbly and golden.
- Serve hot and enjoy!
Notes
- You can substitute ground turkey sausage with regular sausage or even chicken sausage, depending on your preference.
- For extra flavor, you can add a pinch of red pepper flakes or garlic powder to the filling.
