Description

These rich and creamy cheesecake bars combine the smooth sweetness of butterscotch chips with a crunchy graham cracker crust and toasted pecans. Easy to make and irresistibly delicious, these butterscotch graham cracker cheesecake bars are perfect for dessert lovers craving a smooth cheesecake treat with a buttery, nutty twist.

  • 1 package (11 oz/270g) butterscotch chips

  • ½ cup salted butter

  • 2 cups graham cracker crumbs

  • 1 cup chopped pecans

  • 1 package (8 oz/250g) cream cheese, softened

  • 1 ¾ cups sweetened condensed milk

  • 1 teaspoon vanilla extract

  • 1 large egg


Instructions

  • Preheat oven to 325°F (163°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.

  • In a medium saucepan, melt the salted butter and butterscotch chips over low heat, stirring until smooth. Remove from heat and stir in graham cracker crumbs and chopped pecans until well combined.

  • Press the crust mixture evenly into the bottom of the prepared pan. Bake for 10 minutes, then remove from oven and set aside.

  • In a large mixing bowl, beat softened cream cheese until smooth and creamy. Gradually add sweetened condensed milk, vanilla extract, and egg, beating until combined and smooth.

  • Pour the cream cheese mixture over the warm crust, spreading evenly.

  • Bake for 30 to 35 minutes or until the cheesecake is set and the edges are lightly golden.

  • Cool completely at room temperature, then refrigerate for at least 3 hours before slicing into bars.

Notes

  • For added texture, sprinkle extra chopped pecans on top before baking.
