For the Roasted Potatoes:
- 1.5 pounds baby potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Roast the Potatoes:
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, dried rosemary, salt, and pepper until evenly coated.
- Spread the potatoes out on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until golden and crispy, flipping halfway through.
- Prepare the Steak:
- Season the steaks generously with salt and pepper on both sides.
- In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the minced garlic, rosemary, and thyme, cooking until fragrant (about 1 minute).
- Increase the heat to high and add the steaks to the skillet. Cook for about 4-5 minutes per side for medium-rare, or to your desired doneness. Adjust cooking time based on steak thickness and preferred doneness.
- During the last minute of cooking, add the remaining butter to the skillet, basting the steaks with the melted butter for extra flavor.
- Serve:
- Let the steaks rest for a few minutes after cooking to retain their juices.
