For the Steak:

  • 4 ribeye or sirloin steaks (about 1-inch thick)
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • Salt and pepper, to taste

For the Roasted Potatoes:

  • 1.5 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Roast the Potatoes:
    • Preheat your oven to 425°F (220°C).
    • In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, dried rosemary, salt, and pepper until evenly coated.
    • Spread the potatoes out on a baking sheet in a single layer.
    • Roast in the preheated oven for 25-30 minutes, or until golden and crispy, flipping halfway through.
  • Prepare the Steak:
    • Season the steaks generously with salt and pepper on both sides.
    • In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the minced garlic, rosemary, and thyme, cooking until fragrant (about 1 minute).
    • Increase the heat to high and add the steaks to the skillet. Cook for about 4-5 minutes per side for medium-rare, or to your desired doneness. Adjust cooking time based on steak thickness and preferred doneness.
    • During the last minute of cooking, add the remaining butter to the skillet, basting the steaks with the melted butter for extra flavor.
  • Serve:
    • Let the steaks rest for a few minutes after cooking to retain their juices.
    • Serve the buttery garlic steaks alongside the roasted potatoes. Garnish with additional fresh herbs if desired.

Notes

For a richer flavor, marinate the steaks in a mixture of olive oil, garlic, and herbs for a few hours before cooking. You can also add a side of sautéed vegetables or a fresh salad for a complete meal.
