Description

This Cabbage Roll Soup offers all the comforting flavors of classic cabbage rolls in a hearty, savory soup. Made with ground beef, tender cabbage, and rich tomatoes, it’s a warm, filling meal perfect for any time.


Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 green cabbage, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 1/2 cup uncooked white rice
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  • In a large pot, cook ground beef over medium heat until browned. Add onion and garlic, cooking until onion is translucent.
  • Stir in chopped cabbage, diced tomatoes, tomato sauce, beef broth, rice, oregano, basil, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until cabbage is tender and rice is cooked through.
  • Serve hot and enjoy!

Notes

For a slightly tangy flavor, add a splash of vinegar before serving. For a lower-carb option, replace rice with cauliflower rice and adjust cooking time.
