This dish is quick and easy to prepare, making it ideal for busy weeknights, while being versatile enough to customize with different proteins or vegetables. Enjoy a comforting and exciting meal packed with layers of taste and texture.

Ingredients

Scale

Proteins

  • 2 boneless chicken breasts, sliced into bite-sized pieces

Spices & Seasonings

  • 2 tbsp Cajun seasoning blend
  • Salt and pepper, to taste

Pasta

  • 12 oz penne or fettuccine pasta

Vegetables & Aromatics

  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 1 cup diced tomatoes

Dairy & Oils

  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. Prepare the Chicken: Slice the boneless chicken breasts into bite-sized pieces and toss them with the Cajun seasoning. Let this sit for about 10 minutes to absorb the aromatic spices fully.
  2. Cook the Pasta: Bring a large pot of salted water to a boil, then cook your pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water for the sauce later.
  3. Sauté the Chicken and Vegetables: Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken pieces and cook until golden and cooked through. Remove chicken from the skillet and set aside. In the same pan, sauté chopped garlic, onion, bell peppers, and tomatoes until softened.
  4. Make the Creamy Sauce: Pour heavy cream into the skillet with the vegetables. Stir in parmesan cheese and a bit of the reserved pasta water, allowing the sauce to thicken slightly. Season with salt and pepper to taste.
  5. Combine Everything: Return the chicken to the skillet and toss it with the sauce. Add the cooked pasta and toss well to coat every piece with the luscious sauce. Heat through for a minute or two.
  6. Serve Hot: Plate the Cajun Chicken Pasta immediately with optional garnishes like fresh herbs or extra parmesan.

Notes

  • Use fresh Cajun seasoning: homemade blends pack more punch than store-bought.
  • Don’t overcook the chicken: keep it juicy by cooking until just done.
  • Reserve pasta water: it helps thin the sauce if it becomes too thick.
  • Simmer cream gently to avoid curdling.
  • Customize spice level according to your heat preference.
