  • 8 oz fettuccine pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  • Cook the fettuccine pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium-high heat. Add shrimp and Cajun seasoning. Cook until shrimp is pink and cooked through. Remove shrimp from skillet and set aside.
  • In the same skillet, add red bell pepper, yellow bell pepper, red onion, and garlic. Cook until vegetables are tender.
  • Stir in heavy cream and Parmesan cheese. Cook until sauce has thickened.
  • Add cooked pasta and shrimp to the skillet. Toss everything together until well combined.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped parsley.

Notes

  • For a spicier kick, add extra Cajun seasoning or a dash of hot sauce.
  • You can use any pasta shape you prefer, but fettuccine works well for this dish.
  • To make it lighter, you can substitute the heavy cream with a lower-fat alternative like half-and-half.
