- 8 oz fettuccine pasta
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook the fettuccine pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add shrimp and Cajun seasoning. Cook until shrimp is pink and cooked through. Remove shrimp from skillet and set aside.
- In the same skillet, add red bell pepper, yellow bell pepper, red onion, and garlic. Cook until vegetables are tender.
- Stir in heavy cream and Parmesan cheese. Cook until sauce has thickened.
- Add cooked pasta and shrimp to the skillet. Toss everything together until well combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
