Ingredients

4 boneless skinless chicken breasts

1 tablespoon olive oil

4 medium white or cremini mushrooms, sliced

½ medium red bell pepper, diced

½ medium green bell pepper, diced

¼ medium white onion, diced

½ cup shredded pepper jack cheese

4 teaspoons Cajun seasoning

4 tablespoons salted butter
Instructions

Preheat the oven to 375°F (190°C).

In a skillet, heat olive oil over medium heat. Add the sliced mushrooms, red bell pepper, green bell pepper, and onion. Sauté for about 5-7 minutes, until softened.

Add 2 teaspoons of Cajun seasoning to the vegetables, stirring to combine. Continue cooking for another 1-2 minutes. Remove from heat and set aside.

Carefully slice a pocket into each chicken breast, being careful not to cut all the way through.

Stuff each chicken breast with the vegetable mixture and top with shredded pepper jack cheese.

Sprinkle the remaining 2 teaspoons of Cajun seasoning over the chicken breasts.

In a large ovenproof skillet, melt butter over medium-high heat. Brown each chicken breast for about 2-3 minutes per side, until golden.

Transfer the skillet to the preheated oven and bake for 20-25 minutes, until the chicken is fully cooked and the cheese is melted.

Let the chicken rest for a few minutes before serving.

You can substitute the pepper jack cheese with another cheese of your choice, such as mozzarella or cheddar.
