Description

This Cajun Stuffed Chicken Breast is bursting with flavor! Tender chicken breasts are stuffed with a zesty mixture of sautéed vegetables and melty pepper jack cheese, seasoned with a perfect Cajun kick. A quick and easy dish that’s both savory and satisfying!


Ingredients

  • 4 boneless skinless chicken breasts

  • 1 tablespoon olive oil

  • 4 medium white or cremini mushrooms, sliced

  • ½ medium red bell pepper, diced

  • ½ medium green bell pepper, diced

  • ¼ medium white onion, diced

  • ½ cup shredded pepper jack cheese

  • 4 teaspoons Cajun seasoning

  • 4 tablespoons salted butter


Instructions

  • Preheat the oven to 375°F (190°C).

  • In a skillet, heat olive oil over medium heat. Add the sliced mushrooms, red bell pepper, green bell pepper, and onion. Sauté for about 5-7 minutes, until softened.

  • Add 2 teaspoons of Cajun seasoning to the vegetables, stirring to combine. Continue cooking for another 1-2 minutes. Remove from heat and set aside.

  • Carefully slice a pocket into each chicken breast, being careful not to cut all the way through.

  • Stuff each chicken breast with the vegetable mixture and top with shredded pepper jack cheese.

  • Sprinkle the remaining 2 teaspoons of Cajun seasoning over the chicken breasts.

  • In a large ovenproof skillet, melt butter over medium-high heat. Brown each chicken breast for about 2-3 minutes per side, until golden.

  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, until the chicken is fully cooked and the cheese is melted.

  • Let the chicken rest for a few minutes before serving.

Notes

  • You can substitute the pepper jack cheese with another cheese of your choice, such as mozzarella or cheddar.

  • If you prefer a spicier kick, you can add a pinch of cayenne pepper or hot sauce to the stuffing mixture.
