Instructions
- Preheat oven to 350°F (175°C).
- Cut the cookie dough into 24 equal pieces and press each piece into a greased mini muffin tin.
- Bake for 10-12 minutes or until golden brown.
- In a bowl, mix ricotta cheese and powdered sugar until smooth.
- Stir in chocolate chips.
- Spoon the ricotta mixture into the baked cookie cups.
- Top with chopped pistachios.
- Refrigerate for at least 30 minutes before serving.
