Description

This Caprese Pasta Salad combines the fresh, vibrant flavors of a classic Caprese salad with pasta, making it a perfect side dish or light meal. With juicy cherry tomatoes, creamy mozzarella, fresh basil, and a tangy balsamic glaze, it’s a refreshing and easy-to-make dish that everyone will love!


Ingredients

  • 12 ounces pasta (fusilli, bowtie, or penne recommended)
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine), drained
  • ½ cup fresh basil, roughly chopped
  • ¼ cup extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to the package instructions. Drain and rinse with cold water to cool.
  • In a large bowl, combine the cooled pasta, halved cherry tomatoes, mozzarella balls, and chopped fresh basil.
  • In a small bowl, whisk together the extra virgin olive oil, balsamic glaze, minced garlic, salt, and pepper.
  • Pour the dressing over the pasta mixture and toss to combine.
  • Taste and adjust seasoning with more salt or pepper if necessary.
  • Serve immediately, or refrigerate for 30 minutes before serving for the flavors to meld together.

Notes

  • You can prepare this salad a few hours in advance, but it’s best served fresh to retain the texture of the mozzarella and basil.
  • For a more filling dish, you can add grilled chicken or even shrimp.
  • The balsamic glaze adds a touch of sweetness, but you can also use regular balsamic vinegar if you prefer a tangier taste.
