Ingredients
Scale
- 12 ounces pasta (fusilli, bowtie, or penne recommended)
- 2 cups cherry tomatoes, halved
- 1 cup fresh mozzarella balls (bocconcini or ciliegine), drained
- ½ cup fresh basil, roughly chopped
- ¼ cup extra virgin olive oil
- 2 tablespoons balsamic glaze
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Drain and rinse with cold water to cool.
- In a large bowl, combine the cooled pasta, halved cherry tomatoes, mozzarella balls, and chopped fresh basil.
- In a small bowl, whisk together the extra virgin olive oil, balsamic glaze, minced garlic, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Taste and adjust seasoning with more salt or pepper if necessary.
- Serve immediately, or refrigerate for 30 minutes before serving for the flavors to meld together.
Notes
- You can prepare this salad a few hours in advance, but it’s best served fresh to retain the texture of the mozzarella and basil.
- For a more filling dish, you can add grilled chicken or even shrimp.
- The balsamic glaze adds a touch of sweetness, but you can also use regular balsamic vinegar if you prefer a tangier taste.
