Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar.
- Beat in eggs and vanilla.
- In a separate bowl, combine flour, baking soda, salt, and cinnamon; gradually add to the creamed mixture.
- Stir in chopped apples and caramel bits.
- Drop dough by rounded spoonfuls onto the prepared baking sheets.
- Bake for 10-12 minutes or until edges are lightly browned.
- Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
