For the Caramelized Onions:

  • 2 large onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • Salt, to taste
  • 1/2 teaspoon balsamic vinegar (optional)

For the Crispy Fries:

  • 4 large russet potatoes, peeled and cut into fries
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Caramelize the Onions:
    • Heat the butter and olive oil in a large skillet over medium heat.
    • Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for 20-25 minutes until the onions are soft and golden brown.
    • Stir in the brown sugar and cook for an additional 5 minutes until the onions are deeply caramelized.
    • If using, add the balsamic vinegar for extra depth of flavor. Remove from heat and set aside.
  • Prepare the Fries:
    • Preheat your oven to 425°F (220°C).
    • Toss the cut potatoes with olive oil, paprika, garlic powder, salt, and pepper.
    • Spread the potatoes in a single layer on a baking sheet. Bake for 25-30 minutes, turning halfway through, until the fries are golden and crispy.
  • Serve:
    • Serve the crispy fries topped with a generous portion of caramelized onions.
    • Garnish with fresh parsley for a touch of color and flavor.

Notes

For extra crispiness, soak the cut potatoes in water for at least 30 minutes before baking. Dry thoroughly before seasoning and baking.
