- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt

- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups grated carrots
- 1/2 cup chopped walnuts (optional)
- Cream cheese frosting (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
- In a large bowl, combine flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
- Add vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
- Stir in grated carrots and chopped walnuts, if using.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the carrot cake bars to cool completely before frosting with cream cheese frosting.
- Cut into bars and serve. Enjoy!

- You can use a hand or stand mixer for easier mixing.
- For a nut-free version, simply omit the walnuts.
