These Carrot Cake Bars are a simple and delicious twist on classic carrot cake. With the perfect balance of sweetness, spice, and a creamy cream cheese frosting, these bars make for an irresistible treat that’s perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • Cream cheese frosting (for topping)

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  • In a large bowl, combine flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
  • Add vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
  • Stir in grated carrots and chopped walnuts, if using.
  • Pour the batter into the prepared baking dish and spread evenly.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the carrot cake bars to cool completely before frosting with cream cheese frosting.
  • Cut into bars and serve. Enjoy!

Notes

  • You can use a hand or stand mixer for easier mixing.
  • For a nut-free version, simply omit the walnuts.
  • Store leftovers in an airtight container for up to 4 days, or freeze for longer storage.
