This hearty and delicious casserole combines seasoned ground beef, creamy sour cream, and two types of cheese with a soft Bisquick dough crust. Perfect for a comforting weeknight dinner or a family gathering.


Ingredients

  • 1 ½ pounds ground beef
  • 1 onion, minced
  • 1 taco seasoning packet
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ½ cup shredded cheddar cheese, divided
  • ½ cup shredded pepper jack cheese, divided
  • One 4-ounce can diced green chilies, drained
  • 2 cups Bisquick
  • 1 cup water

Instructions

  • Preheat the oven to 350°F (175°C).
  • Heat a nonstick skillet over medium-high heat. Add the ground beef and taco seasoning. Cook until browned on all sides.
  • Add minced onion and diced green chilies to the skillet. Cook until the onion is tender and slightly browned, about 5 minutes.
  • In a bowl, combine the sour cream, mayonnaise, and half of each of the shredded cheddar cheese and shredded pepper jack cheese. Mix well and set aside.
  • In another bowl, combine the Bisquick and water. Stir until a soft dough forms.
  • Spread the Bisquick dough into a greased 9-by-13-inch casserole dish.
  • Top the Bisquick dough with the cooked ground beef mixture.
  • Spread the sour cream mixture over the beef layer.
  • Sprinkle the remaining shredded cheddar cheese and shredded pepper jack cheese on top.
  • Bake in the preheated oven for 30 minutes, or until bubbly and browned on top.
  • Once done, remove from the oven and let it cool slightly before serving.

Notes

  • Garnish with fresh herbs like parsley or cilantro for extra flavor.
  • Serve with sides such as a green salad, steamed vegetables, or garlic bread.
  • To make it spicier, add more diced chilies or a sprinkle of chili flakes on top.
