- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder

- 1/2 cup milk
- 2 large eggs

- 4 oz cream cheese, softened
- For the Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice (optional)
- For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- Graham cracker crumbs (optional, for topping)
Instructions
- Make the Donuts:
Preheat your oven to 350°F (175°C) and grease a donut pan. - Prepare Dry Ingredients:
In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. - Mix Wet Ingredients:
In another bowl, mix the milk, eggs, melted butter, vanilla extract, and softened cream cheese until smooth. - Combine Mixtures:
Slowly add the wet ingredients to the dry ingredients, stirring until just combined. The batter should be smooth but not overmixed. - Fill the Donut Pan:
Spoon the batter into the greased donut pan, filling each mold about 3/4 full. Bake for 10-12 minutes, or until the donuts are lightly golden and spring back when touched. Let them cool completely. - Prepare the Cheesecake Filling:
While the donuts cool, beat the softened cream cheese with powdered sugar, vanilla extract, and lemon juice (if using) until creamy and smooth. Transfer the mixture to a piping bag fitted with a small round tip. - Fill the Donuts:
Once the donuts are cooled, poke a small hole in the side of each donut and pipe in the cheesecake filling until slightly full. - Glaze and Top:
In a small bowl, whisk together powdered sugar, milk, and vanilla extract to make a glaze. Dip each donut into the glaze, letting the excess drip off. For an extra touch, sprinkle graham cracker crumbs on top.
