This creamy and delicious Cheesy Bacon Ranch Potato Salad is a perfect side dish for any occasion. Packed with savory bacon, sharp cheddar cheese, and a tangy ranch dressing, it’s sure to be a crowd favorite. Chill it for an hour to allow the flavors to meld and enjoy!


Ingredients

  • 2 pounds red potatoes (approx. 7 medium or 5 large potatoes)
  • 1 cup bacon, cooked and chopped
  • 1 cup cheddar cheese, shredded

For the Dressing:

  • 1 cup sour cream
  • ½ cup Greek yogurt
  • 1 packet ranch seasoning
  • 3 tablespoons chives, minced

Instructions

  • Wash and cut the red potatoes into bite-sized pieces. Place them in a large pot and cover with water. Bring to a boil and cook until potatoes are fork-tender, about 10-15 minutes. Drain and let cool.
  • In a large mixing bowl, combine the cooked and chopped bacon, shredded cheddar cheese, sour cream, Greek yogurt, ranch seasoning, and chives. Mix well.
  • Add the cooled potatoes to the bowl and gently fold everything together until the potatoes are coated with the dressing.
  • Chill the potato salad in the refrigerator for at least 1 hour before serving. Enjoy!
